For a guided learning journey, that is well structured and not overwhelming, I highly suggest investing in Missy Pore’s Projecting Confidence video course. Missy is the founder of the Projectors for Sewing Facebook group, and sparked the projector sewing revolution. This video course is available to you forever for a one time payment, and you can watch as you like, all at once or at your own pace over time. Missy also offers one-on-one live vide chat sessions to help with calibration.

This site run by Sheredith a member of the Projectors for Sewing Facebook group has many tutorials to learn how projector sewing works, and reviews of projector models on her website and YouTube channel:

The YouTube channel Dailey Sews & Stuff by Branalyn, a Projectors for Sewing Facebook group member, and has the most comprehensive lists of video guides to learn projector sewing on YouTube. Her extensive playlists are very helpful to find exactly the video you need:

Yvonne, the German projector group Admin, has a YouTube channel dedicated to learning how to project patterns. Audio is in German, and you can turn on subtitles and have automatic translation to other languages.

Once your projector is Setup and Calibrated, this is the Top Tips guide I developped to learn all the little things that make projector sewing easier. Many of the tips are workarounds when projecting from Adobe Acrobat Reader, which is not ideal for projecting, but it is the most common software people use. If projecting instead from Inkscape, then most of these “Tips” aren’t needed, because Inkscape doesn’t have the problems that Adobe has when projecting patterns.
